One happy thing leads to another…which leads to another. The world then becomes a very happy place. On once such day (while watching P.S. I love you), I decided to start writing and what better start than mum’s never-failing homemade tomato pasta sauce.
Here is what you need to prepare this recipe (serves 3-4), Prep time (35-40 mins):
Add 7-8 garlic cloves (Garlic is to pasta sauce what finger bowls are to Indian food). Finely chop 3/4 of an onion and add into hot oil with the garlic and stir fry until the onions are light brown – I know you know the drill, but still 🙂
Add roughly cut 3-4 tomatoes. I love my sauce chunky. You can choose to puree them first. Let these cook in a little water (1/4 cup) until you notice them turning a lovely deep red. Add a bay leaf while the tomatoes cook away.
Tip: Add a teaspoon of tomato concentrate (Recommended: Scala) or tomato puree for that extra tang
Let the mix come to a boil and cook for 15-20 minutes. Add chopped mushrooms (or any other vegetables) into the mix now. When the sause looks close to done, add salt, pepper (to taste), season with basil, thyme, oregano and add 1tsp of sugar. Cook for another few minutes and voila – we’re done.
Pour over boiled pasta and enjoy!
