A lazy Sunday at your parents house is good enough. What makes it even better is a walk in the park where you surprisingly meet new-born puppies who are only too happy to see you. After this, when you get back into the house to the smell of South Indian food – you get sad – you reminisce about your childhood. As these memories flooded me, I wanted something REAL…and what is more ‘real’ than cooking something delicious in traditional Indian spices? I present to you…Succulent chicken in roasted spices!
Serves 6-7. Preparation time 45 minutes
Puree 3 tomatoes (optional), finely chop 2.5 large onions (or 3 small ones), a full garlic and a medium size ginger. You may grind the garlic and ginger in a stone hand grinder (for effect :))
For the spicy preparation, roast 3 tbsp of coriander seeds, 1 dried bay leaf, 2-3 kashmiri chillies for a few minutes until the lovely aroma of the spices fills up your kitchen. Grind these roasted spices into a paste in an electric grinder and keep aside.
Heat oil and add the chopped onions, garlic and ginger until medium brown. Add the chicken. Add salt to taste and let the chicken cook for about 10 mins. Add the wonderful spicy paste to the chicken, give everything a good stir and let the chicken cook for another 10-15 mins. Add the tomato puree now (if you decide to) and let the chicken soak up the puree and cook until tender. Plate up and BITE into it!
