Zucchini Parmesan

For all you meat-lovers and moms trying to force-feed vegetables to their kids – there is good news from the vegetarian corner of the world. It’s called Zucchini Parmesan. Parmesan, according to many, is the best thing to happen to us since sliced bread. So there’s the quickest and ‘meaty-est’ vegetarian recipe there is!

Prep time: 10 mins, Cooking time: 15 mins, Serves 3 (side-dish)

Finely chop 2-3 cloves of garlic and saute in oil until brown. Cut up 2 medium zucchini into thin slices and add to the garlic and oil. Stir fry for 2-3 mins. Toss in one large diced tomato and add few drops of water (if necessary). Let this cook for about 10 minutes (uncovered) until the liquid is absorbed. Add salt and pepper to taste. Remove from heat, plate up and sprinkle with shredded parmesan (1/3th of a cup).
