Yesterday, I woke up with certain cravings. Because you can’t hope to digest the guilt of eating potatoes and fried egg alone, you make everyone a party to your crime so that you’re not the only one left feeling guilty 🙂 I did just that. My brain went from the waking stage to the super-active-multi-tasking-6-armed-monster-in-the-kitchen. Here is the story of the ‘fried egg on herb and honey potato wedges’
Prep time: 5 mins, Cooking time: 10 mins, Serves 3
Roughly peel the skin off 3-4 potatoes (raw potatoes) and cut into wedges. A tip is to keep the cut potatoes under flowing water for a few minutes to run out all the starch. But if you live in India, you wouldn’t dream of such luxuries specially if they involve wasting half a bucket of water. You’d just rinse the potatoes and enjoy the starch.
Toss them in hot oil and saute until they begin to turn brown. Add 2-3 cloves of thinly chopped garlic and 1/4th tsp paprika now. Give a nice stir and add 2 tsp of soya and 1/4th cup of honey. Bring down the heat and let the ingredients simmer for 5 mins. The liquid should be dry by now. Add 1/4th cup parsley (preferably fresh) and about 1 full tbsp of thyme into the potatoes.
One a separate pan, cook up a sunny side up egg and plate up by placing the potatoes on the base of the plate first and then rest the egg on top.
