Homemade KFC (and vegetables!)

Everything worthwhile in life needs to be taken to the next level. Relationships, work, personality, passions – anything that means something, will need to leave the comfort zone and plunge into the uncertainly mysterious yet beautiful-when-discovered brave new world. Making KFC at home is that next step in a cook’s life.

Without any more words, I proudly present ‘My very own’ fried chicken and vegetables! 🙂

Wash and clean 4 large chicken breasts. Cut up the chicken breasts into strips that can be easily fried. On the side, mix a beaten egg, a cup curd, 1/2 tsp chilli powder, and 2-3 pinches of salt to the chicken and marinade for at least 3 to 4 hrs.

Ground all 50 gms flour, 1 finely chopped green chillies, 1 tsp white pepper, 1 tsp oregano,  freshly grated or powdered 2-3 cloves of garlic, 1 tsp basil, 1/2 tsp chilli powder and salt to taste.

Cover marinated chicken with ground spicy flour mix and then with 50 gms bread crumbs. Heat oil in a thick bottom pan and deep fry the chicken in a slow fire till it is cooked. Serve hot.

To  fry the vegetables, clean and chop the vegetables and mix them well with an egg. Once they are well coated, repeat the same process of dipping into the flour and bread crumbs before frying! I fried baby corn and mushrooms and they were YUM!
