Chicken, mango and blueberry salad

There is a deep connection between food and nature. I do believe that anyone who understands the value of nature, will understand the beauty of the bounty that this nature offers to us. The colours of nature have a deep connection to food. Some interesting facts tell us how.

It seems obvious to me only now, that there must be a lot of research on this subject by some enchanted scholars. One such study traces the origin of the colour sense in insects to their visits to primeval flowers in order to feed upon the pollen, and in birds to their seeking for fruits. {read the full study here}

In another article published by BBC, deep-sea crabs have a type of colour vision despite living up to 1000m below the surface, say scientists. Wonder why? They suggest crabs use their colour vision to discern edible food. {read full story here}

Call me biased, but I think this theory applies to us perfectly. The reason we have a sense of colour, is to discern and enjoy beautiful food like this…

There is how we do it:

Preparation time: 30 mins. Cooking time: Few minutes to boil the chicken

For the dressing To prepare the dressing, whisk together 2 garlic cloves (minced), 1.5 teaspoons chili paste, 2 tablespoons dark brown sugar (or regular powdered sugar), 4 tablespoons lime juice, 1/4 (small) cup fish sauce. . Set aside in refrigerator.

For the salad To prepare the salad, in a large bowl place 2 cups cooked, boiled and shredded white meat chicken (about 5 regular size pieces), 1/2 onion (very thinly sliced), 1 red bell pepper (very thinly sliced), 1 cup loosely packed basil leaves, 1 cup loosely packed mint leaves and 1 cup loosely packed cilantro leaves (dhaniya), 4 cups pre-washed baby spinach,1 mango, peeled, seeded and cut into 1/2-inch chunks, 1 cup blueberries.

Add dressing and toss to combine. Serve immediately.

Tip: Add cranberries if you do not have blueberries at home

Did I mention anything about colour?

Use thin slices of red pepper. I like chunky mango pieces, but you go your way

Use fresh basil as much as possible. Basil in my backyard. Can you smell it?
