The deadly sandwich

When Tuesdays feel like crap, there is only one thing that can get you up and running. My super special deadly honey roasted ham sandwich with goats cheese, herbs and a touch of honey.

Just generously layer up one side of the toast with honey roasted ham and sprinkle some fresh parsley on it. On the other side, spread some goat cheese (generously again please) and a touch of honey. I used fresh apricot jam. Add salt to taste.

You may also sprinkle some tomato vinaigrette for that tang. Or finely chop some sun dried tomatoes and sprinkle in the sandwich. If you have neither in your kitchen this morning, just serve this awesomeness with some gherkins or olives on the side.

Make the sandwich and sprinkle fresh parsley on it for make-up 🙂 Enjoy your breakfast or you may also serve these as party snacks !

Drizzle some sun dried tomato vinaigrette on the ham for bursts of flavor (see recipe below)

Vinaigrette is simple to make. Here is how simple it is:
Prep time: 10 mins, Cook time: 3 mins. Serving: 2/3rd of a cup

Preparation:

In a saucepan simmer the sun-dried tomatoes in 2 inches of water for 3 minutes, or until they are tender, drain them, and mince them.

In a bowl whisk together the tomatoes, the vinegars, and the garlic paste. Add the olive oil in a stream, whisking, and whisk the vinaigrette until it is emulsified. Stir in the basil.
