Today is a happy day. My state of mind is clear and ‘just’ happy. It is no secret that the key ingredient to happiness is gratitude. Apart from gratitude, happiness also involves transformation. The obvious transformation is in the way that we view life. As we do that, there is often a physical transformation in the world around us.
Speaking of transformations, here is how an aubergine can be transformed to your liking, that’s if you didn’t love it to begin with. Before I head out for a hectic day of shopping, here is what I quickly put together for lunch.
- Preheat the oven to 230C. Cut both the aubergines into thin slices and score the flesh in a criss-cross pattern. Sprinkle the flesh liberally with the oil, salt and some freshly ground black pepper. Place on a baking tray, flesh-side up, and roast in the oven until the flesh is cooked through and turns a dark golden-brown.
- Meanwhile, make the salsa. Mix together about 15 roughly chopped walnuts, 2 tbsp vinegar, 2 crushed garlic cloves, ¼ tsp chilli flakes, 2 tsp olive oil, 1 tbsp chopped parsley, some coriander and one teaspoon of salt.
- Spoon the salsa over the aubergines as soon as they come out of the oven and leave to cool completely. Just before serving, sprinkle the remaining coriander on top along with some goats’ cheese and pomegranate seeds.
