Lemon(y) fig(y) cake

It’s Friday night, 12:30am IST. Watching desperate housewives, sipping a homemade latte, while my husband is out watching a ‘boy’ kinda movie – is exactly my idea of fun. Call me crazy.

When half a dozen good elements come together, they make something great. It’s taught me to never underestimate the small stuff – even if we’re speaking of just some dried figs lying around at home.

Here is how you make something beautiful out of the wonderful small stuff:

Prep Time: 20 mins, Cooking time: Varies (30-45 mins), Calories per serving: 190 approx

  1. Preheat oven to 350 F degrees. Brush a cake/cupcake pan with oil; set aside.
  2. In a medium bowl whisk together 1/2 cup olive oil, 1/2 cup milk and 1 egg. In a separate bowl, whisk together 1.5 cups all-purpose flour,3/4 cup sugar, 1/2 teaspoon baking powder and 1/4 teaspoon salt.
  3. mix the contents of the two bowls gently together. Fold in 1.5 cups coarsely chopped dried figs and 1.5
    teaspoons finely grated lemon zest (from 1 lemon)
  4. Spread batter in prepared pan. Bake until golden and a toothpick inserted in center comes out clean. Check the dessert after 25 mins and continue to bake until done.
