Post wedding blues. Chicken, pasta and fresh veg soup

So, there was a big fat Indian wedding. My brother’s wedding. I did not leave a single tiny miny stone unturned as far as my outfits, the decor, food, dance etc was concerned. And now, that the couple is happily wed, I suffer from the common post-wedding no-stress syndrome.

The following things can save me right now. A cozy bed, late night TV and a hot bowl of hearty chicken soup with pasta and chunky vegetables floating in peace. If you’ve ever been anywhere close to where I am today, you know that this combination is just right.

Cooking time: 45 mins. Prep time: 15 mins. Serves 8

Hearty chicken and pasta soup

In a large pot, heat 4tbsp olive oil over medium heat. When hot, add one finely chopped large onion, one celery stalk and finely chopped 4-5 garlic cloves and saute until the onion is soft and translucent. I used celery salt instead, which is available in convenient packaging these days under the brand ‘urban flavourz’.

Now add the chicken/vegetable stock, 2 diced carrots, and 5-6 blanched and roughly chopped tomatoes. Simmer for 30 minutes.

Add 6-7 finely sliced mushrooms, one diced zucchini, a fitful of basil and parsley and 1tbsp oregano and continue to cook for another 10 minutes.

Cook a cup of pasta, drain and add to the soup pot. Cook for another few minutes. Season with salt and pepper. Sprinkle each bowl with Parmesan cheese if you wish.

Go easy on the herbs if you don’t enjoy a very strong flavour. Also, reduce or increase the amount of pasta and the vegetables you wish to include
