Candied Walnut and Pear Summer Salad

When you’ve done Tibetian food for lunch, Cake pops for Tea and Chicken and cheese quiche somewhere in the middle, the only thing you are allowed to cook is a salad. Here is a light and complex salad ideal for warm summer evenings.

Firstly. Here is the perfect recipe for candied walnuts. Thanks to thetalkingkitchen!

Shopping list: 7-8 raw walnuts, 3 spoons sugar, water, pinch of cinnamon

1. Use frying pan on low heat and toast nuts. In a saucepan, combine the rest of the ingredients and heat on med-low until the sugar has melted, mix to combine, remove from heat. Add the toasted walnuts to the sugar mixture and evenly coat everything. Lay out pieces to cool.

bbeddf265fbe55312fc4bbfc271aaaa5Now this lovely salad just needs you to toss together salad leaves of your choice {my preference being rocket. always}, thinly sliced pear/apple, candied walnuts and few sticks of asparagus.

*If you desire, roast the pear and the asparagus in the oven briefly for that extra oomph.

Optional: You may also add some cranberries and cheese of your choice {I prefer smoked gouda because that’s what I had in the fridge today, try blue cheese if you’re brave}. You may also add chicken if you wish.
