Warm prawn and leek salad with dipping sauce

I have been dreaming about this. Saw Nigella cook prawns with this dipping sauce and couldn’t rest until I tried my version of it. When you spend an hour of your day watching poached prawns dance in warm salt water and slender julienned leeks lap up the scent of butter, you know God exists.

Poach 7-8 medium size prawns in a hot water bath sprinkled with salt and lemon. Finely cut a quarter of a leek and toss in butter. You can also toss the prawns into this mix.

For the dipping sauce, mix 2 crushed garlic cloves, a shredded quarter of a ginger, 4 tbsp fish sauce and an equal amount of water, finely chopped 1 red chilli and 1 big spoonful powdered sugar/honey. Add salt to taste but season in the end because the prawns will be slightly salty from the poaching.

Simple is good. This will make you a believer.
