The healthiest pasta you’ll ever cook

There isn’t a better way to eat pumpkin. Yup, this pasta boasts of a sauce made with the smoky flavour of pumpkin, tomatoes and bell peppers. Pasta doesn’t get healthier.

Shopping list:

  • 5 garlic cloves
  • 1 diced onion
  • 2 bay leaves
  • 2 dry chillies
  • 5 tomatoes
  • 1 tomato puree
  • 1/4th pumpkin
  • 2 small bell peppers
  • basil, oregano, salt, pepper
  • whole wheat spaghetti

Sauté onions and 2 garlic cloves in oil and keep aside when caramelised. Grill tomato halves, diced pumpkin and bell peppers cut in half. Before grilling these vegetables, sprinkle with salt, pepper, full garlic cloves and olive oil. Wait until these are slightly charred (about 10 mins at 200 degrees).

Add the smoked vegetables and the sautéed onion & garlic together in a bowl and puree with a blender. Shift this puree in a pan over heat and add the bay leaves and dried chillies (or paprika/chilli powder). Also add about 7-8 tbsp of packaged tomato puree if you want (optional). In about 5-7 minutes add basil, oregano and salt to taste. Let the sauce cook down until it darkens in colours. This should take about 10 minutes more. Taste to tell.

I love the texture of the pumpkin so I also shredded some and added into the pasta towards the end. Toss with spaghetti. Enjoy pumpkin this way, and get healthy!
