Spicing up the Zucchini Mishmash

If you thought Zucchini was boring, you obviously haven’t tried this. Spiced crumbs give this soup the renovation it needs.

Shopping list
2-3 slices of dried out brown bread
Paprika/or peri peri spice {or any dry spicy ingredient}
2 Zucchini roughly diced
5-6 whole garlic cloves
1 Onion roughly sliced
5-6 Salt and pepper

For the Spiced bread crumbs, blend the paprika, bread, salt and pepper to create this awesomeness. For the soup, sauté garlic and onions in 1 tbsp oil until slightly brown. Add zucchini and sauté for another 2 minutes. Add 3 cups hot water {or vegetable stock}. If you are adding just plain water, you may want to add 4 tbsp tomato puree/ or two diced tomatoes to the mix. Add salt and pepper to taste. Blend hot and serve. 

A version of this recipe can also be made using 8-10 fresh basil leaves.

Accessorise the soup with bread crumbs {or toasted nuts of your choice} and enjoy!
