Herbed Summer Salad

This is a perfect treat for hot summer days like today where the thought of eating rich food seems unreal. The food we eat can help us keep our bodies cool and ready to kick the heat while staying healthy and fresh. For this recipe, use whatever is available in your fridge but make sure you have a good mix of fruits and vegetables.

You can add grapes, apricots or even plums to this recipe.

My fridge list includes:

  • 4-5 asparagus
  • 1 firm diced tomato
  • 1 diced mango
  • 1/2 thinly sliced apple
  • 1 diced cucumber
  • 3-4 Kale leaves (chopped into half). Can substitute with lettuce.
  • 2 pieces of shredded grilled/boiled chicken {used to prepare a stock earlier today} – optional
  • For the dressing: 1 tbsp each of olive oil, white wine vinegar, lemon juice, chopped coriander and fresh mint. You may add 2 pinches of dill if you have it handy. Salt to taste.
  • For garnish: Sprinkle some sunflower/chia/flaxseeds and amaranth pops (optional).

Add all ingredients together and enjoy. I usually add mango once the salad is tossed and ready so that it doesn’t become pulpy. Garnish in the end.
